Roast asparaguses & scrambled eggs on toasts


Asparagus and egg are perfect taste combination. Usually I serve asparagus with poached eggs but with scrambled eggs asparaguses taste also delicious.

I published this recipe on my Polish site "Przepisy Aleksandry" on 13.05.2014.



Ingredients for one portion:

  • 2 eggs
  • 2-3 green asparaguses
  • olive oil
  • teaspoon butter
  • 2 wholemeal toasts
  • salt





Method: 

1. Place the asparaguses halves on baking tray. Sprinkle them with salt and drizzle with olive oil. 
2. Bake them in 180 C degrees until soft.
3. Prepare scrambled eggs from eggs, butter and salt.
4. Place eggs and asparaguses on toasts.
