Bruschettta with mozzarella is my favorite type of Italian antipasti. If you like to make bruschetta just with tomatoes follow this link: Bruschetta al pomodoro.

Ingredients for 3 people:

6 slices of country bread
3 garlic cloves,
3 medium tomatoes

half of regular size mozzarella
1/4 small onion
fresh herbs (basil, oregano)
salt and pepper (if you want to)
extra virgin oil

1. Toast bread on both sides under the grill or grill pan.
2. Rub them with garlic.
3. Put back slices under grill (just for a moment)
4. Cut tomatoes and mozzarella into cubes, wash herbs. Chop up small onion. Mix all ingredients.
5. Put above ingredients on bread.
6. Season with salt and pepper.
7. Drizzle with virgin oil.
