Polish Egg Patties (recipe with step-by-step photos)



Egg patties (kotlety z jajek) are delicious alternative for meat ones. My Mum used to make them for meat free Fridays (one of Polish-Catholic traditions).

Last week I made Chicken Parmesan for the first time...and definitely not the last time. It is delicious! I haven't even heard about this dish until I found recipe in Cook’s Illustrated.
I found out that Chicken Parmesan is very popular in Australia's pubs :).

Marinara is one of my favourite Italian sauces! Serve it with pasta or with Chicken Parmesan. It is also great as a thick pizza sauce.

Creamy chicken & vegetable pie (with step-by-step photos)


 
 
British cuisine makes you warm and happy. One of my best comfort food are pies, especially with chicken and mushrooms. My chicken pie is creamy and really tasty. I hope you will like it :). It is perfect dish for rainy Summer days.

Pasta aglio, olio e pepperoncino is one of the easiest Italian dishes. It is packed of flavours. Serve it with white wine.
Aglio olio is traditional dish of Abruzzo (region in central Italy).

Traditional "Russian Pierogi" with cheese and potatoes

 
"Russian Pierogi" are the most famous type of pierogi in Poland. This dish is simple yet delicious! You can experiment with other pierogi filling, for example filling with your country favourite flavours.
Other popular types of pierogi are with: blueberries, strawberries, blackberries, mushrooms and sauerkraut, meat, sweet farmers cottage cheese.

Risotto is one of my favorite dishes. I found it very easy to make and elegant. 
You can serve it to children even it contains wine - alcohol will evaporate while cooking.

Polish vegetable salad


Ingredients:

Mayonnaise (try to buy Polish one from Winiary company. It tastes like home-made)
2 tablespoons mustard
3 large carrots
2 parsley-roots or parsnips
Half of celeriac
3 large hard-boiled eggs
1 can peas (or half a can of peas and half a can of corn)
Black pepper (salad must be spicy)
4 large Polish sour cucumbers (ogĂłrki kiszone)
3 large potatoes
1 apple
1 small onion
Salt (optional)
1. Wash all the vegetables. Place: potatoes, carrots, parsnips, celeriac, and water in a large pot. Cook until al’dente (vegetables can’t be very soft because it will be hard to cut them and instead of salad you will get a mash).
2. Cooked and cooled vegetables peel from their skin. Cut them into small cubes (one cube should be big as one pea).
3. To large bowl add cooked vegetables, peas (or peas with corn).
4. Cucumbers, onion, eggs, and apple: cut them into the same size small cubes as you cut vegetables. Add them to bowl.
5. Add to bowl mustard, black pepper (for your taste) and mayonnaise (start from 3 tablespoons). Mix everything (not to strong – you want vegetables to keep their shape). You can add more mayonnaise if needed (check photos on my blog how salad should look like).
6. You can add salt but in my opinion it is no needed.    
7. Put bowl with salad to fridge for a few hours.
8. Serve with sourdough bread.
This is vegetarian version. If you like meat use 2 Polish smoked sausages (kielbasa). Cut them into small cubes and add to the rest of ingredients.

GREEN BEANS WITH BREAD CRUMBS


I love vegetables. Green beans are great source of vitamins: K, C, A and manganese. This dinner is quite common in Poland. You can serve it with potatoes and roast meat.  


500G of green beans
3 tablespoons of bread crumbs
Salt
Grease (for example: butter, oil or margarine)


1. Wash green beans. Cook vegetables with smaller 1 tablespoon of salt (you can use it less or more salt)


2. Cook beans for about 30 minutes. Ready ones are soft. 
3. Strain water.
4. Move beans to fry pan. 
5. Add bread crumbs and butter. Mix ingredients. 



6. Fry until bread crumbs will be golden-brown. 
7. Serve hot.
