We have really warm Summer in UK now. I am not sure if I like if weather is like that... I try to drink plenty of water and eat fresh vegetables and fruits.
Khyar bi laban is perfect for Summer, because if served cold will cool your body.
- 1 long cucumber
- 2 cloves garlic
- pepper (optional)
- fresh or dried mint
- Greek yoghurt
1. Chopped the cucumber for small cubes (you can also grate or slice).
2. Sprinkle the cucumber with salt and put into sieve. Leave it for 10 minutes.
3. Mix the yoghurt together with mint (if it is fresh chopped it finely) and crushed garlic.
4. Fold cucumber pieces in yoghurt mixture.
5. Serve cold.
